Meet Seaglass Chef Melissa McKnight

If you've eaten in any of the nine restaurants at Omni Amelia Island Plantation, it's clear that we have an amazing culinary team. But did you know that team is surprisingly comprised by mostly men?  But one female chef is leading the pack in the kitchen at the new lobby lounge,  Seaglass. After receiving a bachelors degree in culinary arts and service management, Chef Melissa McKnight rose the ranks from an internship at Amelia Island Plantation through serving as a line cook, sous chef and chef of the Verandah until her newest appointment at Seaglass.  She's now overseeing the menu served in the ocean view lounge including the charcuterie board, cheese board, white bean hummus, a slider trio (crab cake with coconut aioli, green mango; white oak beef burger with herb aioli, pickled tomato; and bbq pork with spicy bbq, coleslaw), tomato relish, bacon picks, deviled eggs, buffalo chicken lollipops and pretzel bites! Chef Melissa has many talents in the kitchen but her old-world skills of preparing the charcuterie, a brand of cooking devoted to prepared meats, are incredible! Melissa oversees the in-house charcuterie cooler where we buy whole cuts of meat to clean, cure and dry. After a few weeks or months, depending on the item she's curing, the homemade cuts are ready to be served in Seaglass or through our banquets or food and beverage outlets.  She creates house aged bresaola (aged, salted air-dried beef) served with firecracker tomatoes; prosciutto (dry cured ham) served with butter pickles; and coppa (lightly seasoned, dried cured pork shoulder) served with stone ground grain mustard. Get to know a little about Chef Melissa in this blog, resist the urge to sing Sweet Melissa, and then come see us at Seaglass.* If you can't decide what to order, I suggest that charcuterie board or  slider trio but keep reading to get the chef's suggestions!

Wilson Kids Day at Amelia Island Futures Championships

Tennis is in full force at Omni Amelia Island Plantation this week!  The Amelia Island Futures Championships are well underway with the doubles finals starting tonight at 6pm at Racquet Park. There's been some amazing sets this week as the guys are competing for the final spots for the weekend tournament.  Do you have your tickets to the finals this weekend?

Summer Nature Camps at Amelia Island Nature Center

It's summer time!  That's oh-so-exciting for the kids...but what about the parents?  Here's a message I received this week: "I have eight kids at the house. They are all running in and out with water balloons. I've gone through four gallons of ice cream, one pint of cherries, two cans of whipped cream and all the toppings. It's only been three hours.  It's going to be a long summer."

Cliff Drysdale Ladies Tennis Retreat at Omni Amelia Island Plantation

The famous Cliff Drysdale Tennis Ladies Retreats, also known as the “Best Week in Tennis,” have kicked off this year at Omni Amelia Island Plantation. The first five-day, ladies-only retreat was held in May but we have an upcoming ladies tennis retreat at Omni Amelia Island Plantation October 16-20, 2013. Le Clos Serves French Delicacies in the Amelia Island Dining Scene

There’s something to be said for our small island having an abundance of restaurant choices, but to have so many small, privately owned restaurants serving incredible food with fantastic service, is another.  With nine dining options at Omni Amelia Island Plantation it’s easy to stay on our ocean front resort property for every meal and be completely satisfied.  But for many guests, the highlight of Amelia Island dining is to discover the charming historic district of Fernandina Beach and the many shops, boutiques and restaurants that it offers. One such charming place that I highly recommend is Le Clos.

Mother of the Year Honored by The Spa at Omni Amelia Island Plantation

The Spa at Omni Amelia Island Plantation recently had the pleasure of participating in the Mother of the Year contest with the St. Michael Academy. The students of the Amelia Island school each wrote a nomination as to why their mother should be chosen as this year's mother of the year.  With many compelling entries for so many deserving mothers it was hard from our spa director Liz Hutto to select the final winner but the honored mother was Katrina Sell, step mother to student Amber Sell.
