A Weekend Fit for Foodies

The Omni Amelia Island Plantation recently hosted a small group of food enthusiasts looking to expand their culinary palates. These honored guests took advantage of the resort’s “Fish to Fork Culinary Academy Weekend” package, which included oceanfront accommodations, cooking classes with Executive Chef, Daven Wardynski, a private tasting at the R+T Experience, and more!

Guests began their weekend with a Friday night reception and dinner at The Sprouting Project. The outdoor venue has proven to be a source of both entertainment and sustainability for the resort. Undeniably a chef’s playground, the Sprouting Project—consisting of a garden, apiary and aquaponic greenhouse, has provided the culinary team with an array of locally harvested herbs, fruits and vegetables and serves as a point of interest for many guests and members of the press. While rain did attempt to put a damper on the evening’s festivities, the show went on, much to the delight of everyone in attendance…

The following afternoon, the guests were treated to some southern hospitality by way of Chef Daven’s Low Country Boil. The lunch was served from the picturesque Marsh View deck, under a canopy of live oak trees, overlooking the ninth green and the Intracoastal Waterway. Following the chef-prepared lunch, the group was chauffeured back to the resort for a private cooking class. Each guest was provided with their own fresh whole salmon to fillet and dress to their liking as Chef Daven demonstrated the proper method of preparation…

Later that evening, Fish to Fork attendees met poolside at the Rum + Tequila Experience for a private tasting with our F&B Director, Chris Walling and the resident mixologist. Featuring over 100 types of fine rum and tequila, the R + T Experience was a true labor of love for Mr. Walling, who was looking to elevate the level of service at the resort by introducing not just another bar, but an education center for guests looking to dig deeper into the rich history of both spirits. Following the private tasting, the group was escorted to the beach for live music and a private dinner by the ocean prepared by the executive culinary team…

But that wasn’t all…The next morning, all of the Fish to Fork attendees were escorted to the sixth tee box of the Ocean Links Course, where Chef Daven had set up their final cooking class. Using the salmon that they had prepped the day before, the guests were invited to create their own dish, using a variety of fresh ingredients and their own individual cooking stations. Overlooking a truly breathtaking vista, each guest created a truly unique and delectable dish that showcased their own chops in the kitchen.  

 

We think that in hindsight, it’s safe to say that the Fish to Fork Culinary Academy Weekend ended up being a great success. We’d like to thank all of the attendees for coming and the Omni Amelia Island Plantation culinary team for doing what they truly do best.
